Sweet Potato Skillet

Hey y’all!
I wanted to share with you a staple meal in our home! A Sweet Potato Skillet Bake. It’s so easy, quick, healthy, and you can eat it for breakfast lunch or dinner. A win win win!

I’ve made so many adaptations and tweaks throughout the years to this recipe and have made into my own version of a no fuss meal that looks like it took hours! Various adaptations I used throughout the years have come from Pinterest and whole30!

Alright let’s jump right in to my tried and true version of this sweet potato skillet!

  • 2 Tbs Coconut Oil
  • 1lb Pork Sausage (I use pre seasoned jimmy dean pork sausage)
  • 1 Sweet Onion Diced
  • 3 Bell Peppers Diced (doesn’t matter the color)
  • 2 Large Sweet Potatoes Diced into 1in Cubes
  • 4 Eggs
  • Green Onion for Garnish
  • Salt and Pepper to Taste
  • Tips: This works best with a cast iron skillet and I use pre-cut vegetables from my local grocer to speed up the prep process

  • To start, preheat oven to 400 degrees
  • In a skillet over medium heat place 1 tbs of coconut oil and let it melt. Add the sweet onion and sausage to the skillet. Cook sausage thoroughly and onion until it softens. Add salt and pepper to taste. Set cooked sausage and onion mixture aside.
  • In a different skillet over medium high heat combine remaining coconut oil, bell peppers and diced sweet potatoes. Cover and cook for approx. 8-10 min, stirring occasionally. Take cover off and let the sweet potatoes brown. Once brown and tender to a fork, combine all the ingredients back into the cast iron skillet (If you do not have a cast iron, you can also combine into an oven safe dish).
  • Carefully crack eggs into nested spots in the dish. (I make indentions with the back of a spoon). Place in the oven and cook for approximately 12-15 min or until eggs are cooked.

Take out the oven and garnish with green onions.
Finally, ENJOY! It seriously is so good!
